| dc.description.abstract | У статті досліджено сучасні глобальні проблеми людства, значний попит на природні ресурси, нові умови утилізації відходів, інноваційні тенденції розвитку ресторанного бізнесу, діяльність екоресторанів. Проаналізовано екологічне управління, тобто постійний вплив державних органів, економічних суб’єктів, громадськості на особистість, колектив, технологічний процес, підприємство, територіальні органи, державу, який спрямований на дотримання вимог природоохоронного законодавства. Проведено дослідження діяльності мережі еко-ресторанів "Батьківська хата". In the article the modern global problems of humanity, the considerable demand for natural resources, new trends of waste utilization, innovative tendencies of restaurant business development, ecoreurans' activity are investigated. It is the innovative way of economic development that provides updating of technologies, goods and services, efficient use of intellectual potential. The article analyzes the strategies of active influence on the external environment (horizontal integration, vertical integration, concentric and conglomerate diversification), realized through various forms of associations, connections and transactions. Consequently, the study of innovative trends in the development of restaurant business is very relevant at the present stage. It is necessary to pay attention to the use of natural materials in the design of institutions, the cultivation of local organic products, environmentally safe waste disposal, environmental problems that are not specific to the country, but the future of mankind as a whole.
